Raw Courgette and Cucumber Salad

You can find many simple recipes for a cucumber and courgette salad – some merely grate the two together and add mayonnaise and salt and pepper. But I wanted to try something different. The lime and coriander dressing make this salad come alive.  The more neutral the taste of the oil you use the better so the other flavours can come out.

 Slicing CourgettesIngredients:

1 large courgette (zucchini), halved and cut in 4″ lengths (leave peel on)
1 cucumber, peeled, halved and seeded (use a teaspoon to scoop out the seeds) cut in 4″ lengths
2 limes, juiced
1 Tbs agave syrup or honey
1/3 bunch coriander (cilantro), washed, spun and roughly chopped
2 Tbs mild rapeseed oil or extra-virgin olive oil
Himalayan salt
Crushed black pepper

Method:

1. Peel courgette and cucumber to 4″ long thin ‘pasta’ ribbons using a peeler.
2. Blend the lime juice, syrup, garlic, coriander, oil and salt + pepper to taste.
3. Mix the courgette, cucumber and dressing together in a bowl and serve fresh.
